Sometimes, when slicing or chewing, the celery stalk forms this unpleasant peel-like texture like the inside of the peel of a banana.  It's hard to account for how this happens, but I can attest to it happening.

Same for the top layer of spring onions.  That layer is very slimy on the inside compared to all the other layers.
