I'm also partial to mirepoix (onions/carrots/celery), cajun/creole "holy trinity" (onions/bell peppers/celery), and my own personal favorite: Chef's Blade Trinity (onions/jalapenos/mushroom)

Honestly, you can put any sort of meat/carb combo with the last one and it's fantastic.
