Title: What's for dinner?

Figured I should revive the ol' cooking thread so we can talk about all the delicious food we're making.  Delicious, glorious food.

Right now, I'm having some great diced/sauteed onions and mushrooms with tilapia on a bed of white rice.  Simply divine.  Also cheap and easy to make.

I'm going to have some pinto beans that have been slow cooked all day in a crock pot, along with an onion and a few strips of bacon.

Also going to have some green beans, some pork chops, and maybe some hashbrowns.

Pork shoulder cooked with red onions, avocado, tomatoes, garlic and coriander with some rice tonight.
The avocado goes paste-like and turns into a sauce/dressing full of the onions, tomatoes etc.

Mediterranean Platter, double lamb kebab from a Greek restaurant I frequent.  

(BTW, a lot, maybe most "Greek" restaurants in the US are owned and operated by Muslims.  Some of the Mediterranean cuisine overlaps, and they know profits will be better as a Greek restaurant than as a Moroccan, Turkish, Lebanese, etc. restaurant.)

If you've never tried it, I highly recommend going to an Indonesian restaurant and ordering a rice table.  They're fuckin' awesome, and I only get to a good one when I get to the Netherlands.  There are a handful in the US, but the rice table is different (since they don't cater to Indonesians as much here) and I've found only a few here in Vegas and NYC.

I've tried those before, they are very good :) Unfortunately they also cost about 5-10 times as much as me doing some of my own cooking, so they are a rare treat.

ooooo good stuff there man, I am making my chicken diablo. Filet a chik breast lightly brown in olive oil add a cup of marsala wine, two tablespoons of lime juice, half a cup of chopped onions and tomatoes each, teaspoon of tarragon, parsley, oregano and minced garlic with a healthy pinch of crushed red pepper and let simmer for 20 minutes or so. Spoon over some noodles or fet....zing! Pop! that some good shit there and you get a wonderful zip at the throat from the pepper. You try you like.

Homemade chicken noodle soup. I cook the noodles and the chicken separately (the chicken in water and spices, boiled for thirty minutes, then drained, cooled, and diced), and then saute the vegetables and thyme before adding chicken stock, the chicken, and noodles. Chicken thighs make the best soup in my opinion.

I'm just returned from the Olive Garden after watching Frozen at the theater (a very good film I thought, even though animated cartoons are not my thing at all).  I had the seafood alfredo, and was waited on by Anthony, who seems to really like doing what he does.  I always enjoy being placed at one of his stations, and I suspect he will be running the restaurant one day.

Had a really good Steak cheese sandwich at the Charlotte bus station.  They actually have a great cook there...she's friendly and smiles too.  That was a pleasant surprise.  I'm hungry again.

That's a good start.  I dunno about one meal a day though - maybe reduce your carbs a little, get plenty of fresh fruit and veg and get some cardiovascular exercise going (if you don't already).

Erm... lunch today is in the interests of using up leftover crap in the fridge - fishfingers, baked beans, poached eggs and toast.

1 meal a day causes your body to go into starvation mode, lowering your metabolism rate. What this means is that as soon as you start eating like a human again(3-4 times a day) your metabolism will have slowed to the point that you will simply put on weight as fat. What you want to do to properly drop weight(and keep it off) is to eat MORE meals(6-9 times a day), SMALLER meals(no bigger than both fists on the plate), and EXERCISE. You can eat whatever you want and loose weight, as long as you burn more calories per day than you take in.

Ive spent most of my life as an athlete(wrestler in high school and in the military, and as a professional kickboxer) And cutting and or maintaining weight is something Ive done for most of my life.

Tonight, I'm making my homemade vodka sauce and serving it with roasted chicken and whole wheat pasta. I've been perfecting this recipe for the past couple of years, and it has to be the thing I'm proudest of. It uses real vodka, chipotle powder, garlic, prosciutto (or Blackforest ham because I don't want to spend $20 for 3/4 lb of meat), tomatoes, and cream. It's a reward for my sister (at her request) for achieving some goals she has been working on for a while.

Just went to a fancy in a box restaurant which means cheap shit overpriced, had chicken breast which was almost exactly like the cheap shit I had in homeless shelters except it cost about 4000 times as much and the waitress had a fat ass. The only difference was the two beers and lack of assholes eating like savages.

6 oz sirloin, steak fries and a salad with blue cheese from the Ol Steakhouse in Corpus Christi. For 30 plus years it was the Longhorn Steakhouse until a year or so ago the The Longhorn Steakhouse chain came to town and made the owner's an offer they couldn't refuse to change the name. The name may be different but the steaks are still better than anything you can get from the chain.

Outstandingly impressive!  I'm not big on soft stuff in my salads, and I prefer ham on my "whole meal" salads, but a medium rare filet sliced thin along the grain with a horse-radishy ranch dressing on the side and a deviled egg or 2 ends up on the inside the same way.  Just in a slightly different order.  LOL!

To each their own, but when MY cheese goes moldy, I toss it.  LOL!  It reminds my of 2 things. 

1.  An uncle spent time in Hawaii and tried Poi.  He described it as Library Paste gone bad".
2.  A coworker spent 3 years in Korea and tried Kim Chee.  "Make cole slaw.  Leave it on the kitchen counter for a month.  When it is thoroughly rooted, bury in in the ground for another few months.  Eat...

I've had both. I agree with your uncle on poi, but I've had some kimchi that was edible. Most of what I tried was too spicey for my taste, but some it was OK. Not much different than some of the sauerkraut I've had over the years. I'm pretty sure I wouldn't be able to stomach any of the stuff fermented with seafood in it, but I can't eat that shit in it's Scandinavian versions either.

both my grandparents were first generation Swedes--straight from Sweden.  They loved their pickled herring, blood sausage and pudding, head cheese, and luta fisk.  I loved them, but could never stomach that.

If you don't like eating it by 2 years of age, you probably never will.  An exception is pickles and such.  There seems to be a point around 16-20 when the sour taste comes in over the sweet.

Kim chee in Korea, is anything pickled.  In America, it is only cabbage, and it is denatured (made so as to not smell of rot).  Home made kim chee smells ... bad!

My breakfast breakfast is a bowl of cereal and four cups of coffee. But I love sausage, bacon, eggs, hashbrowns, so when I'm not in danger of burning the house down I make breakfast.

My wife is the same way.  She could have breakfast for breakfast, lunch and dinner--and snack time.

That cracks me up.  My favorite breakfast is lunch.  I'm almost never up in time for breakfast.  But I made a stuffed omelet today.  Saute some green pepper, onion, and a garlic clove in an 8" cast iron skillet in bacon fat.  Shave some good cheddar cheese and mince a half-slice of bacon.  Remove sauteed veggies to the plate.  Crack 2 eggs in a small container and add ground pepper and oregano.  Shake well.

Pour into skillet  medium low heat.  Cover 2 minutes.  Add  veggies cheese bacon on half the eggs.  cover 1 minute. 

Fold omelet in half.  Wait 30 seconds and remove.  Serve with buttered cinnamon toast, heated whole milk with vanilla extract.

thats looks so good. But I always find using large plates for such meals makes it look like lesser portions. I prefer to bring it all together on a smaller plate to make it look like a full meal.

You are right about plate size.  Studies seem to show that smaller plates make meals look larger.  Plates have grown larger over the decades.  I use medium plates.  Or more often bowls.  A stir fry in a bowl looks like a lot more than spread out on a plate.

Yeah me too, i prefer bowls these days. I made sausage mash and beans last night and had it in a bowl.

3 hot italian sausages, cooked and cut into coins
1 can of cannellini beans undrained
1 carrot, i onion 1 celery stalk, minced and simmered to tender
1 small can of diced tomatoes
1/4 c of chicken broth (I use paste)
2 cloves garlic, crushed (or garlic powder)
1 tbs oregano
some crushed red pepper flakes to taste

Thicken with flour or cornstarch as desired.

Let sit in fridge overnight.  Reheat.  Yum!

Tonight, it's gonna be mushroom and cheese raviolo from scratch with a yogurt/garlic/basil/curry sauce and a side of buttered garden peas and homemade sourdough bread. Yum !!! I always forget how easy it is to roll out some fresh egg pasta.

Here's a meal I make a lot, because it's fairly cheap and easy and tasty:

1 pound ground turkey (or beef or bison or whatever) - brown it in a large pan, drain
while that's cooking, dice the following: 1 red onion, 1 white onion, 1 large tomato, 1 green pepper, 1 jalapeno
add all that to the browned ground meat then add a can of chunky salsa (I know, there's already the diced tomato.  Yes, on one hand, that's a lot of tomato.  But on the other hand, I really like tomato)
cook on medium for 10 minutes or until onions are suitably cooked, simmer afterwards until salsa thickens
Season to taste - I usually add some lemon juice and lime juice
Serve with taco shells/burritos/tostadas/etc and any combination of sour cream, shredded lettuce, shredded cheese, olives, cilantro, etc.  Go nuts.

Essentially, this is a lot of meat with a LOT of onion/pepper/tomato.  If you do it right, you should be able to make the meat go a long, long way.  Every bite should taste meaty while also containing much more non-meat than meat.  And it's a lot of food for not much cost, so it's a helluva deal.
