Cheapsurprise is also into homebrewing beer. He has less pictures like that to share, and more stories about batches gone bad to tell, but perhaps the two of you could compare notes.

Depends on how its made. It can be strong (almost up to 20%), sweet (sweet-meads) fruity (melomels) spicy, even they type of honey defines the finaletc etc...
The first batch i made its S-T-R-O-N-G....very high ABV, distincy honey flavor and smell (clover honey), its made around the premise that ive always wanted to try a REAL medieval style knock-you-on-your-ass, brawling in the courtyard mead.
The othjer i have sitting is a Melomel. Much more finished taste. I used read pecahes and strawberrys, along with ssweet wild-honey, in the primary fermentation and racked it off for secondary. It will have a distinct sweet flavor, strong feelings of the fruit its made of, and a dark ruby color from the strawberrys and the darker Wild-Honey that i used.
Now excuse me while i get plastered, 12th century style baby. |
